Heart Healthy Apple Pie

Hi everyone...
  Who doesn't love pie? Those storebought varieties, however, can play havoc on anyone's health. With the addition of shortening, artificial ingredients, and who knows what else, it can be difficult - if not impossible - to enjoy some old fashioned pie. Here is a way to fulfill your pie cravings without all the added sugars, fats, and calories....

Crustless Apple Pie

1 medium apple, cored
1/2 medium apple, peeled and diced
cinnamon
nutmeg
1 T wholegrain flour
1 T water

Preheat oven to 350F.
Core medium apple. Gently scoop out most of insides.
Place scooped-out apple into mixing bowl.
In mixing bowl, place remaining ingredients.
Mix thoroughly.
Place ingredients into cored apple.
Place on baking sheet.

Put baking sheet into preheated oven.
Bake for 20 minutes, until knife easily slides through the apple.
Remove from heat.
Cool slightly before eating.
Serve with a dollop of whipped cream or ice cream.

Strawberry Romanced Shortcakes

Happy Valentine's Day to all my readers! This is the day of chocolates, red-colored foods and heart-shaped delights. So, let's make it quick and easy.

Buy a heart-shaped cookie cutter or you can simply use a knive.

Strawberry Romanced Shortcakes

You will need:
Frozen strawberries and juice
(You can make your own juice by simply using a fork to squash some strawberries until the juice runs out..)

Biscuits;
Either bake up some biscuits or buy some baked ones.
You can also use plain scones as your base.
Cut them into heart shapes.

Whipped cream..

Place the biscuit bottom onto a serving plate.
Scoop some strawberries and juice over the bottom.
Place the top on.
Put a dollop of whipped cream on top for a finishing touch.

Serve for dessert or a healthy romantic snack.

Tasty Holiday Crisp

It's that time of year when cranberries add a special delight to a number of tasty recipes. Here is one that is both healthy and delicious. It's a variation on the traditional apple crisp. Enjoy this as a holiday breakfast or dessert and watch the compliments come pouring in.

Apple-Cranberry Crisp
Serves 8

3 c. apples, peeled, cored and sliced
2 c. cranberries, fresh and cut in half or chopped
¼ c. sugar
½ c. flour
½ c. walnuts or almonds, chopped
1 t. cinnamon
4 T. butter, melted

Preheat oven to 350.
Combine apples, cranberries, cinnamon and ½ of sugar in mixing bowl until fruit is evenly coated.

Place fruit mixture into ungreased baking dish.

Mix flour, nuts, butter and remaining sugar in medium-sized bowl. Sprinkle mixture over top of fruit combination.

Place baking dish into preheated oven. Bake for 50 minutes, or until you can poke the apples easily with a fork. Mixture will be bubbly and lightly brown when done.

145 calories, 1g protein, 4g sat fat, 4g mono fat, 15mg chol, 2g fiber, 18g carb

Quick & Tasty Banana Spread

Hi my favorite readers! How many times have you bought bananas, only to find them getting overly ripened before you had a chance to eat them? Instead of tossing them aside, turn them into spread.

You can use the spread on toast, bread, in celery sticks, as a pita chip dip or simply as a side dish for your meal. This makes a great addition to your holiday menu.

Banana Spread
1 banana, peeled
cinnamon
nutmeg

Use a cereal bowl. Place the banana into the bowl and mash thoroughly with a fork. If you want more taste, add cinnamon and/or nutmeg to your taste.

Store leftovers in the fridge.

Tasty & Fiberful French Toast

Hi my favorite readers! Who does not enjoy some delicious French toast every now and then? Did you know that you can add some pizzazz by having some wholegrain fiber? The whole grain not only adds some extra texture, but tastes good. How do you do this, you ask? I'm glad you asked...

Here's one of my newest recipes. It's quick, cheap and easy. Enjoy! I call it....

Oatilicious French Toast
serves 2


You will need:
2 aluminum pie pans
1 mixing utensil
1 frying pan
1 spatula

4-6 pieces of your favorite bread
1-2 eggs, depending upon your taste
cinnamon
¼ cup lowfat or fat-free milk, dairy or soy
¼ cup oat bran

Place the milk, eggs and cinnamon in one pie pan. Beat thoroughly. For extra taste, add in some nutmeg.

Place the oat bran in the other pie pan.

Heat the skillet until a drop of water starts bouncing. Add a little oil, if needed. You don't need the oil if you are using a nonstick skillet.

Dip the bread into the milk mixture.
Then, dip the bread slice into the oat bran. Turn and coat other side of bread.

Place bread into skillet and cook until lightly browned. Flip over when needed.

Remove and serve with fresh fruit, syrup, jam or any other favorite topping.

Leftovers can be kept in fridge for a couple of days.

This recipe is particularly delicious with pumpernickel bread. Experiment with your favorites!

Cheap and Easy Banana Jam

There are other ways to use those over-ripe bananas that usually go into either the garbage or banana bread. Try turning them into a delicious topping. This makes a healthy, low fat spread. Here's how...

1-2 ripe bananas, peeled
cinnamon
nutmeg

Mash the bananas in a small bowl. Add cinnamon and nutmeg per your taste. Keep mixing with fork until desired consistency is reached.

Store in a glass,covered container. Keep in refrigerator.

Spread onto toast, English muffin, crackers or bagel. You can make a peanut butter and jam sandwich for a taste treat. Dip some pita triangles into the spread.

Learning about Garlic & Its Byproducts

One of my students did not understand garlic and products made out of it. So, simply put...

Garlic granules is processed garlic, with no added ingredients.

Garlic powder is garlic granules processed a step further. It
contains nothing but garlic.

Garlic salt is a mixture of garlic powder and salt.

Red Raspberries & Health Benefits

When I was a kid, my family grew red raspberries in our backyard. Getting a bowlful and enjoying throughout the season was a special treat. Then, when I got out on my own and saw the exorbitant prices....YIKES!! Down went my consumption...

My local organic market is having a sale on red raspberries...so I treated myself. Mmm...

In addition to their wonderful taste...red raspberries carry with them a variety of nutritional benefits. For instance....

Red raspberries are very high in Vitamin C, fiber, vitamins B2 and B3, magnesium, plus folate. They also are high in antioxidants. There is talk about them containing strong anti-cancer agents, but I haven't read enough information to convince me of this yet. I'll keep looking.

It's great knowing that not only am I giving my taste buds a treat, but my body is enjoying these nutritional delights also. :)

Red raspberries are great eaten as is, or with some lowfat milk, or added to plain yogurt.
